🔥 Cajun Rice Jambalaya Recipe

Ingredients:

  • 1 lb chicken breast, diced
  • 1 lb smoked sausage, sliced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 1/2 cups long-grain rice
  • 2 tbsp Cajun seasoning
  • 1 tsp thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and sausage, cooking until browned. Remove and set aside.
  3. In the same pot, sauté onion, bell pepper, celery, and garlic until softened.
  4. Stir in diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, paprika, salt, and pepper.
  5. Return the chicken and sausage to the pot. Bring the mixture to a boil.
  6. Reduce heat to low, cover, and simmer for 25–30 minutes, or until the rice is tender.
  7. Fluff the rice with a fork and serve hot.
